Grilled Chicken Adobo
Traditionally, chicken adobo is slowly cooked in a clay or metal pot. In this version of chicken adobo, we are going to cook the dish using a charcoal grill. The chicken will be placed directly on a hot grill to get a nice char, then finished in a pan in indirect heat.
Ingredients:
- 5 lbs chicken drumsticks 
- Adobo rub (equal parts kosher salt, ground pepper, garlic powder) 
- 1/2 cup soy sauce 
- 1/2 cup white vinegar 
- 1/2 cup Merlot 
- 1/2 cup water 
- 5 cloves garlic, crushed 
- 1 tsp whole peppercorns 
- 2 tbs olive oil 
Directions:
- Add olive oil to the chicken. Season generously with the adobo rub 
- Heat the grill to 500 degrees. Add the chicken and turn as needed for about 5-10 minutes, until they have a nice char. 
- Place the chicken in a pan. Add the soy sauce, vinegar, Merlot, water, garlic, and peppercorns to the pan. Seal pan with aluminum foil 
- Place the pan back on the grill and cook until the internal temperature registers 180 degrees when checked with an instant-read thermometer
